Has this ever happened to you ... you arrive home at the end of the day with nothing left out to prepare for dinner ... and, you're hungry! Or, have you ever said out loud, “I just went for groceries and there is nothing to eat for dinner.” Almost everyone can relate these daily statements!
In my experience since using the Instant Pot, I find that dinner is less stressful when the right ingredients are in the cupboard and freezer.
I’m going to share with you what I had for dinner last night. It's quick, delicious and simple! In my freezer I always have individually frozen chicken, as at my place some like white meat, some like dark meat, therefore I always have both on hand.
When I arrived home, I chopped two onions and placed them in the bottom of my Instant Pot adding one cup of water. I sliced open two packs of frozen chicken, one white and two dark, and placed them into the water onion mixture. I secured the lid with the top dial set on ‘sealing.’ Set digital display at 30 minutes HP and voila, the chicken is cooking with no fuss and nothing on the stove to burn or boil over.
My side was garlic rice with grated carrots and peas. All hail to the 4 cup rice cooker for this quick and simple meal. I just don’t have time to be standing over the stove, stirring a pot so I often call on my rice cooker for a little side of rice. Here is what I put in my RC. Half cup frozen peas, 2 grated carrots, 1 cup rice, 1 ½ cups water with 3 shakes of Oh So Vilaca Garlic, and my fave Sunset Seasoned Salt. I mix this together, placing the lid on and pressed the ON button! The best thing about a rice cooker is ... it clicks to off when it's done! Oh! and same with the Instant Pot ... Wohoo times two!
If you are thinking this all sounds simple, IT IS! Cooking with the right appliances and the right foods in your home, packaged well for ready to prepare cooking at home can be much better for you than grab and go on those busy nights with a million things to do.
And, guess what ... it actually tastes better, cuz you made it your way! A pinch of this, a pinch of that ... just the way you like it!
