I love slurping up a gorgeous rice noodle bowl with a broth that is simple, healthy and done in a snap! Ready for this quick & delicious 10 minute dinner you can make yourself. You got this, let's do it!
Soak a handful of rice noodles (purchase at your fave grocery store, I like sticks) in a bowl of boiling water. I literally place my noodle sticks in a tempered glass bowl, boil the kettle, then pour the water over the sticks to completely immerse. Now put this aside.
In a large wok or saute pan, quickly poach in boiling water with salt and garlic, 1 lb. of shrimp (I love Jiggs n Reels Market in Paris.) Once cooked 4 minutes in a boiling soak, then remove the shrimp from your saute pan and set aside.
Using your saute pan or wok again, leave a some of the shrimp water in the pan, keeping the heat to medium high, add 2 cups cherry or grape tomatoes, 1 chopped onion, mushrooms (clean, don't cut), garlic (fresh or dried) a hit of salt and cover to simmer 4 minutes. This will stew down which is perfect and makes it own brothy sauce. Let it simmer covered, and only if needed add 1/2 cup of water to keep it simmering. After approx 4 minutes and cherries have burst, add 2 large handfuls of fresh spinach, a hit of your favourite seasoning (I love Rosemary) and a hit of sesame oil for good measure! :) Before you put the lid back on, place the shrimps back on top of the spinach and allow this mixture to simmer turning the heat down now for 4 minutes of a light bubbling simmer.
While that is creating a gorgeous savoury shrimp creation for your noodles, drain the noodles and place a handful in the bottom of your favourite deep bowl. I love my bowls from Pottery on Seven!
